In an interview with Game Informer, Hideaki Itsuno, the director of Dragon's Dogma 2, announced that the console version will not be limited in terms of frames per second. Still, the development team has worked to maintain it around 30 fps, which means the figure can increase a bit, but also decrease, so it's best to expect the game to run most of the time at 30 frames per second on PS5 and Xbox Series X|S.

Dragon's Dogma 2 will also not have visual modes; forget about performance or graphics mode
On the other hand, Hideaki Itsuno revealed that Dragon's Dogma 2 will not have visual modes, so don't expect options like performance mode or graphics mode since Capcom did not consider them. He also mentioned that there won't be much to modify in terms of visual options: "the game has an uncapped framerate. Our goal is to go around or above 30 frames per second. That's also for consoles. There are some features you can turn on and off, but there are no various sets of options you can change at once. But yes, the framerate will have no limit on all consoles."
According to players' experiences in similar cases, most agree that stability is better than variability, especially in games involving passive moments and dynamic combat sections. Finally, we'll have to wait for player reactions regarding the visual performance once Dragon's Dogma 2 debuts, as previous Capcom games have achieved 60 fps, although they are titles that are not open-world or huge, like Resident Evil and Devil May Cry.
